The guided laplacian method is a supervised machine learning algorithm that restores the gradients in the clipped parts of your images. It can give significantly better results than all the other options in darktable at the expense of being crazy slow. Learn how to use it, how it works, how to avoid needing it (hint : it's on your camera) and remember that everything has a price.
